The other week I thought I had finally solved one of the biggest issues in my life: what to eat for lunch. I know this might sound silly but as someone with no cooking abilities and a ton of food aversions, figuring out how to feed myself a cost effective, non-disgusting, nutrient-rich lunch has been the bane of my existence for quite some time. So when I had the idea to make a protein-packed veggie dog with some raw sauerkraut on a hot dog bun, I felt like I had solved nuclear fusion. What a relief to not be consumed with worry about what I would eat in the middle of my workday! I could finally use my brain power for something more useful—or even more appealingly, not use it at all.
Until Wednesday hit and I was over the veggie dog.
